Fish recipe in tahini sauce

Tahini sauce, tjina O serve, As it is pronounced in the Middle East, it is an emulsion made from tahini paste, an oily concentrate that is extracted from sesame seeds. To make the sauce, it is reduced with enough ice water, lemon juice, salt, garlic and cumin, leaving a kind of dip or mayonnaise that is served in the oriental mince to eat with pita bread or to pour over the Arabic empanadas. Fish in tahini sauce is a preparation of Israeli cuisine: the recipe is shared by chef Ambrosio Pastrana, from the Libertador hotel.


  1. Prepare the tahini sauce: place the garlic and parsley in a processor and make it work, add the Tahini and mix well. Add the lemon juice and mix again. Add the salt. Add water little by little until it becomes the consistency of sauce. It can take more or less water, depending on the consistency of the tahini.
  2. Cook the fish: Preheat the oven to 180 °. Rub the fish with olive oil, salt and pepper. Bake for 15-20 minutes. Serve with the Tahini sauce on top and garnish with a few sprigs of parsley. Accompany with white rice.
